Half Marathon Thoughts.........

Well, the Chevron Houston Marathon/Aramco Houston Half Marathon was today! As we were driving to church today we saw some of the runners from the freeway. Just looking at them from afar made me even more excited and motivated to do the half next year! As we were passing by the runners I told myself that I will do everything possible to try to get to the half next year!

Right now, I am planning to run again in the Rodeo Run and compete in the 10k.

Sugar Cookies

I thought I would share a sugar cookie recipe that I use! These cookies always go fast. The are sooo quick and easy to make! bty, we never have had almond extract when I make them so I just substitute the almond extract for another teaspoon of vanilla. So if you do not have any extract, its ok to use just vanilla. They taste really yummy anyway!


“Not to Roll” Sugar Cookies

1 cup sugar
1 cup butter or margarine, softened
1 teaspoon of vanilla
1 teaspoon of almond extract
1 egg
2 1/3 cups of Gold Medal unbleached all-purpose flour
½ teaspoon of baking soda
Colored sugar or granulated sugar

Heat oven to 375

In a large bowl, beat sugar and butter on low speed or with spoon until light and fluffy. Stir in vanilla, almond extract and egg. Stir in flour and baking soda. Shape dough by teaspoonfuls into balls. On ungreased cookie sheet, place 2 inches apart. Flatten with bottom of glass dipped in sugar. Bake 9-11 minutes or until set. Immediately remove from cookie sheet to cooling rack.

New Year Goals.......

Here are some of my resolutions for 2009:

1. Grow closer to God always and and to be a better follower of this verse: Philippians 4:8

2. Understand Geometry proofs.

3. Maybe learning to crochet and Calligraphy?

4. Train for the 2010 Half Marathon (and sign up before it is filled up!)

5. Getting better at playing piano and working on Photography

I think that's it.......

New Years Eve Party!!

On the eve of New Years, The Copples had a game night! It was loads of fun! Mrs. Copple made alot of good food. The games we played included Kings in the Corner, Sequence, Scattergories , Pictionary, Candy Land, and Monopoly. At midnight we made a toast and drank sparkling grape juice!
